Ingredients:

1 lb boneless, skinless chicken breasts
2 tsp chipotle chili powder
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1 cup quinoa, rinsed
2 cups water or low-sodium chicken broth
1 cup fresh or frozen corn kernels
1 cup canned black beans, drained and rinsed
1/2 cup cherry tomatoes, halved
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
Juice of 2 limes
1 tbsp olive oil (for dressing)
1/2 tsp honey or agave syrup
Optional: sliced avocado and lime wedges for serving

Preparation Steps:

  • In a small bowl, combine chipotle chili powder, smoked paprika, garlic powder, cumin, salt, and black pepper.
  • Rub the spice mixture evenly over the chicken breasts.
  • Heat 1 tablespoon olive oil in a skillet over medium heat. Add the chicken and cook for 5-6 minutes per side, or until fully cooked and internal temperature reaches 165°F (74°C). Remove from heat and let rest for 5 minutes, then slice thinly.
  • While the chicken cooks, bring water or chicken broth to a boil in a medium saucepan. Add quinoa, reduce heat to low, cover, and simmer for about 15 minutes until the liquid is absorbed and quinoa is fluffy.
  • In a large bowl, mix cooked quinoa, corn kernels, black beans, cherry tomatoes, red onion, and cilantro.
  • In a small bowl, whisk together lime juice, 1 tablespoon olive oil, and honey. Pour over quinoa mixture and toss to combine.
  • Divide quinoa mixture into bowls, top with sliced chipotle chicken.
  • Garnish with sliced avocado and lime wedges if desired, then serve immediately.
