Ingredients:

2 medium chicken breasts (about 12 oz), thinly sliced
1 tablespoon olive oil
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 chipotle pepper in adobo sauce, minced
2 tablespoons adobo sauce from chipotle peppers
1/2 cup Greek yogurt (plain, full fat or low fat)
1 medium head cauliflower (about 4 cups riced)
1 tablespoon olive oil (for cauliflower rice)
1/2 cup fresh cilantro, chopped
1 lime, juiced
1/4 cup diced red onion
1/2 cup cherry tomatoes, halved
1 avocado, sliced (optional)
Salt to taste (for cauliflower rice)
Freshly ground black pepper (to taste)

Preparation Steps:

  • In a bowl, combine smoked paprika, ground cumin, garlic powder, onion powder, salt, and black pepper. Add sliced chicken and toss to coat evenly.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes until cooked through and slightly charred. Remove from skillet and set aside.
  • In the same skillet, add minced chipotle pepper and adobo sauce. Stir for 30 seconds to release flavor.
  • Lower heat and stir in Greek yogurt until a creamy sauce forms. Return chicken to skillet and coat with the creamy chipotle sauce. Cook for another 2 minutes to heat through. Remove from heat.
  • To prepare cauliflower rice, pulse cauliflower florets in a food processor until rice-sized pieces form.
  • Heat 1 tablespoon olive oil in a separate large skillet over medium heat. Add cauliflower rice, diced red onion, and cook for 5-6 minutes until softened. Season with salt, pepper, and lime juice.
  • Remove from heat and stir in chopped cilantro for freshness.
  • To assemble, divide cauliflower rice between bowls. Top with creamy chipotle chicken, cherry tomatoes, and avocado slices if using.
  • Garnish with extra cilantro and a lime wedge if desired. Serve immediately.
