Smoky Chipotle Chicken and Caramelized Sweet Potato Dinner Bowl

Why this?
This Chipotle Chicken and Sweet Potato Dinner Bowl is a perfect post-workout meal combining protein-rich grilled chicken with nutrient-dense sweet potatoes. The smoky chipotle seasoning offers a delicious kick without overpowering the natural sweetness of the caramelized sweet potatoes, while the fresh greens add crunch and vitamins, making it a balanced and flavorful dinner option.

Ingredients:

2 large chicken breasts (about 400g)
2 medium sweet potatoes (about 400g), peeled and cubed
1 tablespoon olive oil
1 teaspoon chipotle chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt to taste
Freshly ground black pepper to taste
2 cups mixed greens (such as kale, spinach, or arugula)
1 tablespoon lime juice
1 teaspoon honey (optional, for balancing heat)

Preparation Steps:

  • Preheat the oven to 200°C (400°F).
  • In a bowl, toss the sweet potato cubes with half the olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until caramelized and tender.
  • Meanwhile, prepare the chipotle seasoning by mixing chipotle chili powder, smoked paprika, garlic powder, salt, and pepper.
  • Rub the chicken breasts with the remaining olive oil and coat evenly with the chipotle seasoning.
  • Heat a grill pan or skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes per side until fully cooked and nicely charred.
  • Let the chicken rest for 5 minutes, then slice into strips.
  • In a large bowl, toss the mixed greens with lime juice and honey (if using) to add a slight sweetness that complements the smoky heat.
  • Assemble the bowl by placing a bed of greens, topping with roasted sweet potatoes and sliced chipotle chicken.
  • Serve warm for a satisfying, protein-rich dinner.
