Ingredients:
1 cup dried green or brown lentils
2 cups sliced mushrooms (button or cremini)
1 medium onion, diced
3 cloves garlic, minced
1 medium carrot, diced
1 celery stalk, diced
4 cups vegetable broth (low sodium)
1 tablespoon olive oil
1 teaspoon dried thyme
1 teaspoon smoked paprika
Salt to taste
Black pepper to taste
2 cups fresh spinach
1 tablespoon soy sauce (optional, for umami boost)
Preparation Steps:
- Rinse lentils thoroughly under cold water and set aside.
- Heat olive oil in a large pot over medium heat. Add diced onion, carrot, and celery. Sauté for about 5 minutes until softened.
- Add minced garlic and sliced mushrooms to the pot. Cook for another 5-7 minutes until mushrooms release moisture and start to brown.
- Stir in dried thyme and smoked paprika, cooking for 1 minute to release their aroma.
- Add rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat to low and simmer uncovered for about 25-30 minutes, or until lentils are tender.
- Season with salt, black pepper, and soy sauce if using. Stir in fresh spinach and cook for an additional 2-3 minutes until wilted.
- Taste and adjust seasoning as desired. Serve hot.
