Ingredients:

4 large bell peppers, halved and seeded
1 cup quinoa, rinsed
2 cups vegetable broth
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 can (15 ounces) black beans, drained and rinsed
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup frozen corn kernels
1/2 cup grated cheddar cheese
1/4 cup fresh cilantro, chopped
Sour cream, for garnish (optional)

Preparation Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • Place the bell pepper halves in a baking dish, cut-side up.
  • In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then cover and reduce heat. Simmer for 15 minutes, or until all the liquid is absorbed.
  • Heat olive oil in a skillet over medium heat. Add onion and garlic, and sauté until softened, about 5 minutes.
  • Add black beans, cumin, chili powder, salt, and pepper to the skillet. Cook for an additional 2 minutes.
  • Stir in cooked quinoa and frozen corn until well combined.
  • Spoon the quinoa and bean mixture into each bell pepper half. Top with grated cheddar cheese.
  • Cover the baking dish with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted.
  • Garnish with fresh cilantro and a dollop of sour cream, if desired, before serving.
