Ingredients:

150g of fresh salmon fillet
2 large eggs
1 cup of cooked quinoa
1 small avocado, sliced
1 cup of spinach leaves
1 tablespoon of olive oil
Salt and pepper to taste
1 teaspoon of lemon juice
1 tablespoon of chopped fresh dill

Preparation Steps:

  • Preheat the oven to 200°C (400°F).
  • Place the salmon fillet on a baking tray lined with parchment paper. Drizzle with half the olive oil, sprinkle with salt, pepper, and half the dill. Bake for 12-15 minutes, or until fully cooked.

  • In a bowl, lay a bed of cooked quinoa. Place the cooked spinach leaves around the quinoa.
  • Once the salmon is cooked, flake it apart and place it on top of the quinoa.
  • Add the cooked eggs next to the salmon.
  • Garnish with the sliced avocado, the remaining dill, and a drizzle of lemon juice.
  • Season with additional salt and pepper if needed.
