Ingredients:

2 cups of rice
1 cup of pinto beans, soaked overnight and drained
1 cup of black beans, soaked overnight and drained
1 cup of chickpeas, soaked overnight and drained
1 large onion, chopped
2 cloves of garlic, minced
2 tablespoons of butter
1 cup of collard greens, chopped
1/2 cup of dry salami, diced
1/2 cup of cheese, shredded
1/4 cup of peanut butter
1 tablespoon of miso paste
1/2 cucumber, diced
1/4 cup of hummus
2 eggs
1/4 cup of wheat flour
1/4 cup of dill pickles, chopped

Preparation Steps:

  • Rinse and cook rice as per package instructions.
  • In a large pot, heat butter over medium heat and sauté onion and garlic until translucent.
  • Add the pinto beans, black beans, chickpeas, and enough water to cover them. Bring to a boil, then reduce heat and simmer until beans are tender, about 1 hour.
  • Stir in the collard greens and cook until they are wilted and tender, about 10 minutes.
  • In a separate pan, cook the eggs to your liking (scrambled or fried).
  • Mix in the salami, cheese, peanut butter, miso paste, and cucumber into the beans and greens mixture. Cook for another 5 minutes, stirring frequently.
  • Add the hummus and stir until well combined.
  • Serve the bean and greens mixture over the cooked rice, top with cooked eggs, and sprinkle with dill pickles.
  • Dust with wheat flour before serving for a thickened, creamy texture.
