Why this?
This breakfast omelette is designed to provide a balanced, protein-rich start to the day, combining whole eggs, egg whites, lean turkey, and cottage cheese for sustained energy and muscle recovery post-workout. Fresh vegetables add fiber and micronutrients without overpowering the dish, making it both delicious and nutritious.
Ingredients:
3 large eggs
1/4 cup egg whites
1/4 cup low-fat cottage cheese
1/2 cup fresh spinach, chopped
1/4 cup cherry tomatoes, halved
1/4 cup diced red bell pepper
2 tablespoons chopped onions
1/4 cup cooked lean turkey breast, diced
1 teaspoon olive oil
Salt to taste
Black pepper to taste
1 tablespoon fresh chopped parsley (optional)
Preparation Steps:
- In a bowl, whisk together the eggs, egg whites, cottage cheese, salt, and black pepper until smooth.
- Heat olive oil in a non-stick skillet over medium heat.
- Sauté onions, red bell pepper, and cherry tomatoes for 2-3 minutes until softened.
- Add chopped spinach and cook for another minute until wilted.
- Add the cooked turkey breast to the vegetable mixture and stir briefly to warm through.
- Pour the egg mixture evenly over the sautéed ingredients in the skillet.
- Cook on medium-low heat until the eggs begin to set around the edges, about 3-4 minutes.
- Gently lift the edges with a spatula and tilt the pan to let uncooked eggs flow underneath.
- Once the omelette is mostly set, carefully fold it in half and cook for another 1-2 minutes.
- Slide the omelette onto a plate, garnish with fresh parsley if desired, and serve immediately.
