Ingredients:

8 oz red lentil pasta
1 tablespoon olive oil
3 cloves garlic, minced
1 cup asparagus, trimmed and cut into 1-inch pieces
1 cup cherry tomatoes, halved
1 cup zucchini, diced
1/2 cup yellow bell pepper, diced
1/2 cup green peas (fresh or frozen)
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped
1/4 teaspoon red pepper flakes (optional for mild heat)
Salt to taste
Black pepper to taste
2 tablespoons grated Parmesan cheese (optional)
Juice of half a lemon

Preparation Steps:

  • Cook the red lentil pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  • Add the asparagus, zucchini, yellow bell pepper, and green peas to the skillet. Cook for 4-5 minutes until vegetables are tender but still crisp.
  • Add the cherry tomatoes and cook for an additional 2 minutes until they soften slightly.
  • Reduce heat to low and add the cooked red lentil pasta to the skillet. Toss to combine all ingredients evenly.
  • Stir in the fresh basil, parsley, red pepper flakes (if using), lemon juice, salt, and black pepper. Mix well to coat the pasta and vegetables with the garlic herb sauce.
  • Remove from heat and, if desired, sprinkle with grated Parmesan cheese before serving.
