Why this?
This recipe cleverly replaces traditional potato mash with creamy cauliflower mash, making it a perfect keto-friendly dinner that satisfies comfort food cravings without the high carbs. The garlic butter chicken pairs beautifully with the smooth, cheesy mash, creating a balanced and flavorful meal.
Ingredients:
1 large head of cauliflower (about 600g), cut into florets
2 tablespoons unsalted butter
3 cloves garlic, minced
1/4 cup heavy cream
1/4 cup grated Parmesan cheese
Salt and pepper to taste
4 boneless, skinless chicken thighs
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
Fresh parsley, chopped (for garnish)
Preparation Steps:
- Bring a large pot of salted water to a boil and add cauliflower florets. Cook until very tender, about 10-12 minutes.
- While cauliflower cooks, season chicken thighs with salt, pepper, smoked paprika, and dried thyme.
- Heat olive oil in a skillet over medium-high heat. Add chicken thighs and cook for 6-7 minutes per side until golden brown and cooked through. Remove from pan and keep warm.
- Drain cauliflower well and transfer to a food processor. Add butter, minced garlic, heavy cream, Parmesan cheese, salt, and pepper.
- Pulse until smooth and creamy, scraping down sides as needed. Adjust seasoning to taste.
- Serve chicken thighs over cauliflower mash, garnished with chopped fresh parsley.
