Why this?
This Instant Pot Beef Stew recipe is a perfect lunch dish that combines the rich flavors of beef with hearty vegetables in a comforting broth. Using an Instant Pot ensures that the beef turns out exceptionally tender and the flavors meld together beautifully in a fraction of the time it would take to make a traditional stovetop stew.
Ingredients:
1 lb beef chuck, cut into cubes
2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
3 carrots, peeled and chopped
2 potatoes, peeled and cubed
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon dried thyme
2 tablespoons tomato paste
2 cups beef broth
1 cup water
1 bay leaf
Preparation Steps:
- Turn the Instant Pot to sauté mode and heat the olive oil.
- Add the beef cubes and sear until browned on all sides, then remove and set aside.
- In the same pot, add the onion and garlic, sautéing until they start to soften.
- Add carrots and potatoes to the pot and sauté for a few minutes.
- Stir in the salt, pepper, thyme, and tomato paste.
- Add the seared beef back into the pot along with beef broth, water, and bay leaf.
- Close the lid, set the Instant Pot to manual high pressure for 35 minutes.
- Once done, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
- Remove the bay leaf and adjust seasoning if necessary.
