Grilled Chicken Quinoa Salad

Why this?
This Grilled Chicken Quinoa Salad is crafted for an energizing, protein-rich lunch that's perfect for refueling after a morning workout. The combination of lean chicken and quinoa provides a high-protein base, while fresh vegetables add crunch and fiber, making it a balanced meal. The simple lemon and olive oil dressing adds a refreshing zest without overpowering the natural flavors of the ingredients, keeping the dish light and suitable for a post-workout meal.

Ingredients:

2 boneless, skinless chicken breasts (about 6 ounces each)
1 cup quinoa
2 cups water
1 red bell pepper, diced
1 cucumber, diced
1/2 red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup olive oil
2 tablespoons lemon juice
1 garlic clove, minced
Salt and pepper to taste

Preparation Steps:

  • Rinse the quinoa under cold water until the water runs clear. In a saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all water is absorbed. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
  • While the quinoa is cooking, season the chicken breasts with salt and pepper. Grill the chicken over medium-high heat for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F. Let it rest for a few minutes and then slice thinly.
  • In a large bowl, combine the cooked quinoa, red bell pepper, cucumber, red onion, and parsley.
  • In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper to create the dressing.
  • Pour the dressing over the salad and toss to combine. Add the sliced grilled chicken on top.
  • Serve the salad either warm or chilled based on preference.
