Why this?
This keto-friendly dinner recipe highlights tender chicken breasts stuffed with a creamy garlic and cream cheese filling complemented by sweet caramelized onions. It balances rich flavors without overpowering the main ingredient, making it perfect for a satisfying low-carb meal that feels indulgent yet healthy.
Ingredients:
2 large chicken breasts (about 6 oz each)
4 oz cream cheese, softened
1 small onion, thinly sliced
2 cloves garlic, minced
2 tablespoons olive oil
Salt, to taste
Black pepper, to taste
1/2 teaspoon dried thyme (optional)
Fresh parsley for garnish (optional)
Preparation Steps:
- Preheat oven to 375°F (190°C).
- In a skillet, heat 1 tablespoon olive oil over medium heat. Add sliced onions and cook slowly until caramelized, about 15 minutes, stirring occasionally. Set aside.
- Mix cream cheese with minced garlic, salt, pepper, and dried thyme if using.
- Carefully slice a pocket into each chicken breast without cutting all the way through.
- Stuff each chicken breast with the cream cheese mixture and some caramelized onions.
- Secure with toothpicks if needed to keep filling inside.
- Heat remaining olive oil in an oven-safe skillet over medium-high heat.
- Sear chicken breasts for 2-3 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, until chicken is cooked through and juices run clear.
- Remove toothpicks, garnish with fresh parsley, and serve warm.
