Ingredients:
Preparation Steps:
- Preheat oven to 400°F (200°C).
- Season chicken thighs generously with salt, pepper, thyme, and smoked paprika.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken thighs skin-side down and sear until skin is golden and crispy, about 5-7 minutes. Flip and cook another 3 minutes.
- Remove chicken from skillet and set aside.
- Reduce heat to medium. Add butter to the same skillet. Once melted, add minced garlic and sauté for 1 minute until fragrant.
- Pour in chicken broth, scraping up any browned bits from the pan. Stir in heavy cream and Parmesan cheese, simmering gently until slightly thickened, about 3 minutes.
- Add fresh spinach and cook until wilted, about 2 minutes.
- Return chicken thighs to the skillet, skin-side up, spoon some sauce over them.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through (internal temperature 165°F or 74°C).
- Remove from oven and let rest for 5 minutes before serving.
