Ingredients:

1 cup crushed graham crackers
3 tablespoons unsalted butter, melted
2 cups cream cheese, softened
3/4 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1 cup Greek yogurt
2 scoops vanilla protein powder

Preparation Steps:

  • Preheat your oven to 325°F (163°C).
  • Mix the crushed graham crackers with melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Set aside.
  • In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and vanilla extract, continuing to beat the mixture.
  • Add eggs one at a time, fully incorporating each before adding the next. Avoid over-mixing.
  • Whisk in Greek yogurt and vanilla protein powder until the mixture is smooth and well combined.
  • Pour the filling over the crust in the springform pan.
  • Bake in the preheated oven for 45-50 minutes, or until the edges are set but the center is still slightly jiggly.
  • Turn off the oven, open the oven door slightly, and let the cheesecake cool in the oven for 1 hour.
  • Remove the cheesecake from the oven, cover it, and refrigerate for at least 4 hours, preferably overnight.
  • Serve chilled.
