Why this?
This recipe highlights the fresh, vibrant flavors of cilantro and lime paired with juicy chicken thighs, perfectly cooked to crispy skin perfection. It’s a simple yet flavorful keto-friendly dinner option that balances zesty citrus with aromatic herbs without overpowering the natural richness of the chicken.
Ingredients:
4 bone-in, skin-on chicken thighs (about 1.5 lbs)
1/4 cup fresh cilantro, chopped
2 tablespoons olive oil
2 tablespoons fresh lime juice
3 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
Salt, to taste
Black pepper, to taste
Preparation Steps:
- Preheat oven to 400°F (200°C).
- In a small bowl, mix olive oil, lime juice, minced garlic, ground cumin, smoked paprika, salt, and black pepper.
- Rub the chicken thighs all over with the marinade mixture, ensuring even coating. Let it marinate for at least 15 minutes (or up to 1 hour in the refrigerator for deeper flavor).
- Place chicken thighs skin side up on a baking sheet or oven-safe skillet.
- Bake in the preheated oven for 35-40 minutes or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
- Remove from oven and sprinkle chopped fresh cilantro over the chicken.
- Let rest for 5 minutes before serving to allow juices to redistribute.
